Breaded Small Perch

Ingredients

Directions

Prepare the fish

  1. Clean and wash the fish, salt and let sit for a half hour.

  2. Dry each fish with a clean cloth, dredge first with the eggs beaten with the milk, then with the flour, then again with the eggs and then with the bread crumbs.

  3. Hold the fish's head with one hand and the tail with the other, while dredging with the bread crumbs so that it is uniformly covered.

Fry and serve

  1. Fry in hot oil, at low temperature, so that it does not burn.

  2. Arrange on a platter and garnish with the quartered lemon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs form a sticky layer that helps the flour and bread crumbs adhere to the fish.
Flour
A dry first coating that gives the egg wash a surface to cling to and helps the crust stick.
Bread crumbs
Form the crisp, golden outer crust when the fish is fried.
Oil
Conducts heat to fry the breaded coating until crisp and browned.

The step that matters

Fry at low temperature. Frying in hot oil at a low temperature lets the fish cook through before the bread crumb coating burns. Too high a heat browns the outside while the inside stays underdone.
