Perch Polish-style

Ingredients

Directions

Poach the fish

  1. Clean and wash the fish.

  2. Boil the fish with the carrot, onion, parsley root, and juniper berries.

  3. When boiled, let it cool a little in its own liquid, then remove carefully and debone while keeping its shape intact.

  4. Arrange the fish on a long platter and pour some lemon juice over it.

Make the sauce

  1. Remove the vegetables from the liquid where they boiled with the fish and boil the potatoes in the same liquid.

  2. After the potatoes are done, cube them.

  3. Take a pan and fry the flour with the butter.

  4. Pour a cup of the fish liquid over the fried flour and let it boil for a few minutes, stirring continuously.

  5. Add the yolks mixed with the sour cream.

  6. Remove from heat, add the cubed potatoes, salt, and mix.

Serve

  1. Pour the sauce over the fish.

  2. Garnish with chopped parsley.

  3. Arrange sliced boiled red beets that were kept in vinegar around the fish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Perch
The main fish, poached whole and kept intact for serving.
Eggs
Yolks enrich the sauce, giving it body and a smooth, creamy texture.
Sour cream
Adds richness and tang, and helps make the sauce creamy.
Flour
Fried in butter to form a roux that thickens the sauce.
Potatoes
Boiled and cubed, they add starch and body to the dish.

The step that matters

Adding the yolks to the hot sauce. Egg yolks can curdle or scramble if they meet very hot liquid directly. Removing the pan from heat before adding the yolk and sour cream mixture helps keep the sauce smooth and creamy.

Flavor stand-ins for the onion

  2. Chivebetter flavor fit
  3. Parsnipbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against carrot, parsley, potato, egg, cream, butter, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
