What each ingredient does

Sheatfish
Firm, mild white flesh that holds its shape through frying and baking in the sauce.
Flour
Dusting the fish helps it brown when fried and lightly thickens the sauce.
Onion
Softens and sweetens as it cooks, forming the base flavour of the sauce.
Tomatoes
Provide the main body, acidity and liquid of the sauce as it reduces.
Oil
Conducts heat for frying the onion and fish and carries flavour into the sauce.

The step that matters

Reducing the liquid in the oven. Fish is delicate and can dry out or fall apart if baked too long. Baking until the sauce reduces should be watched closely so the fish stays moist while the sauce thickens.

Swap the tomato

How well each one fits the dish's main ingredients (flour, onion, sugar):

  1. Arrowrootfits better
  2. Okrafits better
  3. Leekfits better
  4. Tomatothe original

Fit is the average pairing score against flour, onion, sugar. Candidates are from the same food group and used in at least 100 recipes.
