Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the main protein; becomes tender and flavorful during long, gentle simmering.
Mushrooms
Release moisture and savory flavor that combines with the pork to build the sauce.
Onions
Soften and sweeten as they cook, adding depth to the sauce.
Sour cream
Adds richness and a tangy acidity that rounds out the sauce.
Flour
Coats the meat so it browns and thickens the sauce as it cooks.
Lard
Fat for frying that browns the floured meat and carries flavor.

The step that matters

Fry everything at very low heat for 20 minutes. Low heat lets moisture from the mushrooms and meat release gently while the flour-coated surfaces brown slowly, without scorching the onions or drying the meat.
