Why it works: Onion and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
Chicken Enchiladas II
Ingredients
Directions
Make the filling
Boil chicken breasts until done, then cube.
In a large oiled pan, sauté chicken, spices, and onions until onions are clear.
Allow chicken to cool and add cheese.
Roll the enchiladas
In an oiled skillet, cook tortillas on each side until soft (approximately 10 seconds each side on medium‑high heat).
Set tortillas aside, stacking to prevent drying, until cool enough to touch.
Place chicken mixture in the center of each tortilla and roll.
Place enchiladas in a 9‑inch square dish and cover with green sauce.
Make the green sauce
In a saucepan, sauté onion and garlic until onions are clear.
Add tomatillos, green chilies, paprika, water and bring to a boil.
Add remaining ingredients, cover, reduce heat and simmer for 20 minutes.
Allow to cool for a few minutes and pour into a blender.
Blend the mixture until desired texture is achieved.

What each ingredient does
- Chicken breasts
- Provides the bulk of the filling, cooked through and then cubed for a tender, substantial bite.
- Cheese
- Melts into the filling, adding richness and helping bind the roll together.
- Corn tortillas
- Pliable wrapper that softens when briefly cooked so it can be rolled without cracking.
- Tomatillos
- Give the green sauce its tart, acidic flavour.
- Green chilies
- Add mild heat and a fresh, green flavour to the sauce.
- Onion
- Softens and turns sweet and aromatic as it cooks in the pan.
The step that matters
Soften the tortillas and keep them pliable. Brief cooking makes corn tortillas soft enough to roll. If they are left to dry out, they become stiff and crack or tear when filled, so stacking them to hold moisture while they cool helps them roll cleanly.
Swap the cumin
How well each one fits the dish's main ingredients (chicken, onion, garlic, cheese, corn, sauce, pepper):
- Cuminthe original
- Thymefits about as well
- Oreganofits about as well
- Basilfits less well
Fit is the average pairing score against chicken, onion, garlic, cheese, corn, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
