Why it works: Butter and cream are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 41,516 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓
Fairytale Layered Cake
Ingredients
Directions
Make the cake
Whip 5 egg whites with 5 tablespoons of sugar and vanilla.
Add the slightly beaten yolks and mix.
Add a tablespoon of cacao.
Add the ground walnuts.
Pour the mixture into a baking pan that has been lightly greased with oil and dusted with flour.
Bake at medium heat.
Add the meringue layer
In the meantime, whip 3 egg whites with 3 tablespoons of sugar and vanilla.
Spread the whipped egg whites on top in a uniform layer.
Place the cake back into the oven so that the egg whites layer gets baked.
Remove from the pan, set on a plate and let cool.
Fill, cover and garnish
Beat the butter with 3 tablespoons confectioner's sugar and cacao.
Add the yolks one by one and mix well.
Use this cream to cover the cake, laying a thicker layer on top.
Garnish with 5 oz/150 g whipped cream and various fruits from preserves.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whipped whites trap air to give the sponge and topping lift and a light structure.
- Butter
- Fat that sets as it chills, giving the cream filling a rich, firm, smooth texture.
- Ground walnuts
- Add body and a nutty flavour to the sponge, making it denser than a plain cake.
- Cacao
- Provides the chocolate flavour and dark colour of both the cake and the cream.
- Confectioner's sugar
- Sweetens the cream filling and dissolves smoothly into the butter for a fine texture.
The step that matters
Baking the whipped egg white layer. The foam must be spread evenly and baked long enough to set. Heat coagulates the egg proteins and dries the foam, so the layer holds its shape instead of weeping or collapsing.
