What each ingredient does

Bulk breakfast sausage
Provides the main meaty flavor and fat that carries the seasoning through the filling.
Cooked potatoes
Add starchy body and soft texture that bulks out the scramble.
Onions
Soften during simmering, adding sweetness and savory depth to the filling.
Tomatoes
Add moisture and acidity that help form a loose, saucy filling.
Cheddar cheese
Melts over the warm filling, adding richness and a creamy finish.
Flour tortillas
Provide a soft, pliable wrapper that holds the filling together.

The step that matters

Simmer until the vegetables are tender. Simmering for the full 20 minutes softens the onions and peppers and lets excess moisture from the tomatoes and salsa evaporate, so the filling stays spoonable rather than watery inside the tortilla.

Swap the tomato

How well each one fits the dish's main ingredients (potato, onion, pepper, sauce, garlic, flour, cheddar cheese):

  1. Chivefits better
  2. Broccolifits better
  3. Spinachfits about as well
  4. Tomatothe original

Fit is the average pairing score against potato, onion, pepper, sauce, garlic, flour, cheddar cheese. Candidates are from the same food group and used in at least 100 recipes.
