Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions, carrots, celery and leeks
Sweet aromatic base that flavours the soup as they soften in butter.
Pumpkin
Main body of the soup, giving its colour, sweetness and smooth texture.
Rice
Breaks down when overcooked, thickening the soup and giving it body.
Sherry
Deglazing liquid that adds acidity and depth once reduced.
Cream
Adds richness and a silky mouthfeel when stirred in before reheating.
Clarified butter
Cooks the vegetables gently and adds a rich, nutty fat.

The step that matters

Cooking the rice until it breaks down. Rice must be cooked well past tender so it dissolves and thickens the soup; undercooked grains leave a gritty texture. Adding cream only just before reheating keeps it from splitting under prolonged heat.
