  6. Let the soup simmer further until the flesh is tender and the soup has the desired consistency.

What each ingredient does

Flesh
Provides savoury meaty flavour and body to the broth as it cooks down.
Okra
Releases mucilage that thickens the soup and gives it a silky texture.
Aubergines
Break down when cooked and mashed, adding body and a creamy texture to the soup.
Tomatoes
Add acidity and moisture, helping to build the soup's base flavour.
Onion
Adds sweetness and aroma as it softens and flavours the broth.

The step that matters

Strain, mash and return the vegetables. Mashing the cooked vegetables releases their starch and pulp into the liquid, thickening the soup. Mashing before they are fully tender leaves lumps and uneven consistency.

Fit is the average pairing score against pepper, tomato, okra. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
