Why it works: Flour and milk are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 78,219 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Kyrgyz Pancakes
8 thin pancakesIngredients
Directions
Make the batter
Mix all together with a mixer or by hand until free of lumps.
Cook the pancakes
Spray frying pan with "Pam" and heat over high heat until hot.
Reduce heat and pour approximately 1/3 cup of batter in the center and tilt to cover the entire bottom of the pan.
When small bubbles form and the bottom begins to brown, flip and cook the other side.
We like to eat these sprinkled with sugar and rolled up.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the structure that holds the thin pancake together when flipped.
- Eggs
- Add structure and richness, helping the pancake set as it cooks.
- Milk
- Provides the liquid that hydrates the flour and gives the batter its pourable thinness.
The step that matters
Pouring and tilting the batter. Reducing the heat before pouring keeps the batter from scorching before it sets. Tilting spreads a thin, even layer so the pancake cooks evenly and does not turn out thick or patchy.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
