What each ingredient does

Mushrooms
Give the soup its main body and earthy flavor as they cook down in water.
Sauerkraut
Adds sourness and tang that balances the rich milk and roux.
Flour
Browned in fat and cooked with milk, it thickens the soup into a smooth body.
Milk
Makes the roux into a creamy, smooth liquid that enriches the soup.
Shortening
Carries the flour for the roux, helping it brown and coat evenly.
Onions
Frying them until lightly browned adds sweetness and savory depth.

The step that matters

Cooking the roux until smooth. Stirring constantly while adding milk keeps flour lumps from forming, since flour clumps when hot liquid hits it unevenly. Lightly browning the flour first also gives the soup a nutty flavor.
