What each ingredient does

Flour
Forms the structure that holds the dough together as the cookies bake.
Eggs
Bind the dough and add richness, moisture, and a glossy egg-washed top.
Honey
Adds sweetness and moisture, and helps the cookies brown and stay soft.
Dark brown sugar
Adds sweetness, moisture, and a deeper caramel flavour with some chewiness.
Baking soda
Reacts with the acidic honey and sugar to help the cookies rise and spread.
Sweet butter
Adds fat for tenderness and rich flavour.

The step that matters

Baking at 450°F for about 7 minutes. At this high heat the honey and brown sugar darken quickly, so the cookies can scorch in moments. Watch them closely and pull them as soon as the edges set and turn golden, since the centres firm up as they cool.
