Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and help bind the dough.
Sour cream
Adds moisture and tang, keeping the dough tender.
Baking soda
Reacts with the acidic sour cream to lift and lighten the dough.
Egg whites
Whipped to trap air, giving the topping a light, airy structure.
Ground walnuts
Add texture and a nutty flavor to the topping.
Marmalade (in the method)
Adds fruity sweetness and moisture between the dough and topping.

The step that matters

Baking the topping at the right heat. Starting at medium heat and then raising it lets the dough set and cook through before the whipped egg white topping browns. Too high a heat at the start can scorch the top while the base stays raw.
