What each ingredient does

Tomatoes
Provide the main body, flavour and liquid base of the soup.
Tomato juice or v8
Adds liquid and concentrated tomato flavour to thin the puree.
Extra virgin olive oil
Adds fat for a smooth mouthfeel and carries savoury flavours.
Garlic
Adds sharp, pungent aroma that mellows as the soup chills.
Cucumber
Adds cool, crisp texture to the vegetables floated on top.
Green bell pepper
Adds crisp texture and fresh, grassy sweetness to the vegetables.

The step that matters

Chill the soup long enough. Chilling lets the raw garlic, herbs and tomato flavours blend and mellow, so the soup tastes balanced rather than sharp. Overnight chilling gives the best result, as the record notes.
