What each ingredient does

Pumpkin
Provides the moist, sweet filling that bakes soft inside the pastry.
Oil
Brushed on the dough to add richness and help it brown in the oven.
Sugar
Sweetens the filling and helps the exposed dough caramelise to golden brown.
Strudel dough
Forms the thin, layered pastry that bakes crisp around the filling.

The step that matters

Rolling the dough around the filling. Filling too heavily or rolling loosely can cause the pumpkin to leak or leave gaps. Thin, even layers of dough stretch well and bake crisp, so the filling stays enclosed while cooking.
