Csirke Paprikas

Ingredients

Directions

Prepare the chicken

  1. Wash chickens and wipe dry.

  2. Heat lard in a large skillet; fry chicken pieces on both sides until golden.

  3. Remove chicken pieces as cooked and keep warm.

Make the sauce

  1. When all pieces are cooked pour off almost all fat; add onions and garlic. Saute until tender.

  2. Stir in paprika; cook one minute.

  3. Mix in chicken broth; bring to a boil. Season with salt and pepper; return chicken pieces to skillet.

  4. Cook slowly covered until chicken is tender. Add more broth during cooking if needed.

  5. Remove to a warm platter.

  6. Combine flour and sour cream; mix into skillet.

  7. Cook slowly stirring until thickened and smooth.

  8. Return chicken pieces to sauce; leave on stove long enough to heat through.

What each ingredient does

Chicken
Provides the main protein; slow covered cooking turns it tender in the sauce.
Lard or butter
Fat for browning the chicken pieces and carrying the paprika flavor.
Onions
Soften and sweeten as they cook, forming the base of the sauce.
Paprika
Gives the sauce its characteristic red color and sweet, earthy aroma.
Flour
Thickens the sauce together with the sour cream as it cooks.
Sour cream
Adds richness and a tangy note, and thickens and smooths the sauce when heated gently.

The step that matters

Adding the sour cream. Sour cream can curdle or separate when it gets too hot or boils. Mixing it with flour first and cooking slowly over gentle heat keeps the sauce smooth.
