Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air and adds richness and tender texture to the cookies.
Sugar
Creaming with butter adds sweetness and helps the cookies brown lightly.
Eggs
Bind the dough and add structure and moisture to the baked cookies.
Flour
Forms the main structure of the cookies once baked.
Baking soda
Reacts with the cream of tartar to produce gas that lifts the cookies.
Cream of tartar
Acidic partner to baking soda, helping the cookies rise and stay tender.

The step that matters

Baking time. Baking soda and cream of tartar lift the dough quickly, and over-baking dries the cookies and removes their tenderness. Bake only until lightly browned.

Swap the vanilla
