Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's brain
Forms the main body of the cakes, becoming firm after brief boiling.
Egg
Binds the mixture together and, brushed on, helps the bread crumbs adhere.
Bread crumbs
Form a crisp, golden coating that browns during frying.

The step that matters

Boil the brain briefly before chopping. Brief boiling firms the delicate brain so it can be chopped and shaped. Boiling too long makes it tough and dry, while too little leaves it too soft to hold its shape.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, lime, egg, bread, parsley):

  1. Capsicumfits better
  2. Shallotfits better
  3. Carrotfits better
  4. Tomatothe original

Fit is the average pairing score against pepper, lime, egg, bread, parsley. Candidates are from the same food group and used in at least 100 recipes.
