Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Its soft, cooked flesh forms the body of the dish once scooped out.
Margarine
Adds fat and richness that carry flavour and smooth the mixture.
Garlic
Pushed into the eggplant, it perfumes the flesh as it cooks.
Tomato
Adds moisture and mild acidity that brighten the mashed eggplant.
Onion
Adds sharp aroma and a little bite to the mixture.
Chili pepper
Adds heat and pungency to the mixture.

The step that matters

Roast the eggplant until fully soft. Heat turns the flesh soft and creamy and loosens it from the skin, so it scoops cleanly. Slits let steam escape so the skin does not burst. Undercooked flesh stays firm and clumps when mixed.
