What each ingredient does

Callaloo
Leafy green that wilts down to form the bulk and body of the dish.
Salt fish
Provides savoury, salty flavour and a firm, flaky texture once soaked and shredded.
Bacon
Renders fat during frying, adding savoury richness to the oil and the dish.
Salt beef or pork
Adds meaty, savoury depth and chew that complements the salt fish.
Onion
Softens and sweetens as it fries, forming the aromatic base of the dish.
Garlic
Releases pungent aroma when fried, deepening the overall flavour.

The step that matters

Soaking and boiling the salt fish. Salt fish is heavily salted, so soaking and then discarding the water removes excess salt. Boiling in fresh water then makes it tender enough to shred evenly before frying.

Swap the clove

How well each one fits the dish's main ingredients (fish, onion, garlic, celery, beef, shrimp, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Cuminfits better
  4. Clovethe original

Fit is the average pairing score against fish, onion, garlic, celery, beef, shrimp, pepper. Candidates are from the same food group and used in at least 100 recipes.
