What each ingredient does

Prawns
Turn firm and opaque as they cook, giving the soup its main protein and bite.
Chicken stock
Forms the liquid base that carries all the other flavors.
Straw mushrooms
Add a soft, tender texture and absorb the broth's flavors.
Fish sauce
Adds salty, savory depth that seasons the whole soup.
Lime juice
Adds sharp acidity that brightens the soup and balances the salt.
Lemongrass
Contributes a citrusy aroma that defines the soup's character.

The step that matters

Simmering the prawns on low heat. Prawns turn firm and rubbery when overcooked. Keeping the heat low and cooking them only until opaque keeps them tender.
