Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leeks
Soften into the sweet, mild base that gives the soup its body and flavour.
Potatoes
Break down during cooking to thicken the soup and give it a smooth, creamy texture.
Egg yolks
Enrich and thicken the finished soup when blended with cream and added to hot liquid.
Cream
Adds richness and a silky mouthfeel to the finished soup.

The step that matters

Adding the egg yolks and cream. Egg yolks thicken when heated gently. Blend them with cream first, then add slowly to hot soup while stirring, so they do not scramble.
