Ingredients
Directions
Prepare
Separate the eggs.
Put baking paper on the baking sheet.
Make the batter
Mix the egg yolks with the orange juice, sugar, and salt, and cream them.
In a separate bowl, beat the egg whites until stiff.
Add the stiff egg whites to the yolk mixture.
Add the flour and carefully fold everything in.
Do not beat, otherwise the air will go out of the mixture.
Put the mixture in a piping bag.
Pipe and bake
Carefully pipe rods of about 15 cm length onto the paper.
Bake in the middle of a preheated oven at 240 °C for 12–15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Egg whites trapped in the batter give the rods their light, airy structure as they set.
- Sugar
- Sweetens the batter and helps the rods brown in the oven.
- Plain flour
- Gives the baked rods enough structure to hold their shape once set.
- Orange juice
- Adds moisture and a light citrus aroma to the batter.
The step that matters
Folding in the flour and egg whites. Beating after the stiff egg whites are added knocks out the air they hold. Less trapped air means flatter, denser rods that rise less in the oven.
