Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the loaf as its proteins bind with liquid and egg.
Baking powder
Releases gas in the batter so the loaves rise and become light.
Egg
Binds the dough and adds structure and richness to the crumb.
Evaporated milk
Adds moisture and milk solids that help the crumb brown and stay tender.
Sugar
Sweetens the loaf and helps the crust brown during baking.
Butter or margarine
Adds fat that tenderizes the crumb and carries flavour.

The step that matters

Checking the bake with a skewer. Sugar and moisture-rich dough can look set on the outside while the centre is still wet. Testing the centre with a skewer confirms the crumb has set through, so the loaf does not sink or turn gummy as it cools.

Swap the coconut

How well each one fits the dish's main ingredients (butter, flour, sugar, raisin, egg, evaporated milk, almond):

  1. Vanillafits better
  2. Coconutthe original
  3. Figfits about as well
  4. Cherryfits less well

Fit is the average pairing score against butter, flour, sugar, raisin, egg, evaporated milk, almond. Candidates are from the same food group and used in at least 100 recipes.
