Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the starch and gluten network that gives the brownies their structure.
Egg whites
Add structure and help bind the batter, setting as it bakes.
Butter
Adds fat for richness and a tender, moist crumb.
Cocoa
Supplies the chocolate flavour and deep brown colour.
Barbados sugar
Adds sweetness and moisture, and helps keep the brownies soft.
Baking soda
Reacts to lift the batter slightly and aid browning.

The step that matters

Add pecans and flour and mix 3-4 minutes at low speed. Once flour is added, its proteins begin forming gluten, and extra mixing makes the brownies tougher and more cake-like. Keeping the speed low and the time within the stated range helps preserve a fudgy texture.

Swap the cocoa

How well each one fits the dish's main ingredients (sugar, pecans, flour, egg, butter):

  1. Almondfits better
  2. Macadamia nutfits better
  3. Brazil nutfits better
  4. Cocoathe original

Fit is the average pairing score against sugar, pecans, flour, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
