What each ingredient does

Okra
Provides the main bulk and a soft, slightly mucilaginous texture when cooked.
Tomato
Adds moisture and acidity that brightens the vegetables as they cook down.
Green pepper
Contributes crisp-tender texture and a fresh, slightly bitter vegetal flavour.
Celery
Adds crunch and a mild savoury aroma to the stir-fry.
Margarine or olive oil
Conducts heat for the stir-fry and carries flavour through the vegetables.

The step that matters

Stir-fry for about 3-5 minutes. Cooking over high heat for a short time keeps the vegetables crisp-tender. Longer cooking softens the okra further and releases more of its sticky mucilage, and the tomato releases moisture that can make the dish watery.

Swap the okra
