What each ingredient does

Chicken breasts
Browned first to build flavour and provide the main protein in the curry.
Onions
Soften and sweeten as they cook, forming the body of the sauce.
Tomatoes
Break down during simmering to add moisture, acidity and body to the sauce.
Coconut milk
Adds fat and richness, mellowing the spices into a creamy sauce.
Prawns
Cook quickly in the sauce, adding sweet seafood flavour and tender texture.
Turmeric and curry powder
Provide the earthy, aromatic spice base and yellow colour of the curry.

The step that matters

Cooking the prawns in the coconut milk. Prawns turn rubbery when overcooked. They need only a few minutes in the simmering sauce until pink and opaque, so timing matters more than the rest of the sauce.
