Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Margarine
Adds fat that keeps the dough tender and helps it turn flaky as it bakes.
Self-rising flour
Provides the structure of the dough, and its raising agent lets it rise lightly in the oven.
Feta cheese
Gives the stuffing a salty, tangy flavour and a creamy, crumbly texture.
Spinach
Supplies the bulk and moisture of the filling.
Egg yolks
Bind the stuffing and brush on top to brown the pies to a golden colour.

The step that matters

Sealing the folded dough around the stuffing. Only a teaspoon of filling goes into each circle, so the folded edges must be pressed firmly shut. A loose seal lets moisture and filling escape during baking, leaving the pies dry and hollow.

Swap the sesame

How well each one fits the dish's main ingredients (flour, cheese, spinach, egg):

  1. Chickpeafits better
  2. Lentilsfits about as well
  3. Cashew nutfits about as well
  4. Sesamethe original

Fit is the average pairing score against flour, cheese, spinach, egg. Candidates are from the same food group and used in at least 100 recipes.
