Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the dough its structure and chew.
Yeast
Ferments the dough, producing gas that makes the rolls rise and become light.
Eggs
Add richness, tenderness and structure to the dough.
Milk
Adds moisture and softness, and its sugars help the crust brown.
Sugar
Feeds the yeast and adds sweetness and browning in the baked rolls.
Margarine
Adds fat that tenderizes the dough and gives the baked rolls a soft texture.

The step that matters

Adding the flour gradually and kneading. Adding flour a cup at a time lets the dough absorb it evenly without becoming stiff. Kneading develops gluten, which traps the gas from the yeast so the dough rises well.
