  1. Combine the seasoning mix ingredients in a small bowl and set aside.

Make the sauce

  1. In a 2-quart saucepan, fry the bacon over high heat until crisp.

  2. Stir in the onions.

  3. Cover the pan and continue cooking until the onions are dark brown, but not burned, about 8 to 10 minutes, stirring occasionally.

  4. Stir in the seasoning mix and cook about 1 minute.

  5. Add the stock, chili sauce, honey, pecans, orange juice, lemon juice, orange and lemon rinds and pulp, garlic, and Tabasco, stirring well.

  6. Reduce heat to low and continue cooking about 10 minutes, stirring frequently.

  7. Remove the orange and lemon rinds.

  8. Continue cooking and stirring about 15 minutes more to let the flavors marry.

  9. Add the butter and stir until melted.

  10. Remove from heat.

  11. Let cool about 30 minutes.

Finish and blend

  1. Pour into a food processor or blender and process until pecans and bacon are finely chopped, about 10 to 15 seconds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bacon
Renders fat and adds smoky, savory flavor to the base.
Onions
Cooked to dark brown, they add sweetness and depth to the sauce.
Beef stock
Forms the liquid base that the sauce simmers and reduces in.
Honey
Adds sweetness and helps the sauce become glossy and thick.
Chili sauce
Provides tomato-based body, sweetness and tang.
Butter
Adds richness and a smooth, rounded finish when stirred in at the end.

The step that matters

Cooking the onions to dark brown. Onions cooked until dark brown develop deep, sweet flavor through browning, but burned onions turn bitter and spoil the whole sauce. Keep the heat controlled and stir occasionally.

Swap the white pepper

How well each one fits the dish's main ingredients (pepper, onion, garlic, beef, honey, orange, lemon):
