Curried Chicken and Bow Tie Pasta Salad

Time50 minutes

Ingredients

Directions

Poach the chicken

  1. Poach chicken by placing it in a large pot with enough cold water to barely cover.

  2. Add peppercorns, bay leaf, parsley, thyme, onion, carrot and celery cut into quarters.

  3. Bring to a boil with lid on; reduce heat to low and simmer for 50 minutes.

  4. Cool in poaching liquid, then drain, skin and shred.

Make the curry flavoring

  1. To make curry flavoring, soften diced onion in hot oil, then add curry powder and cook over medium-high heat for a further 3 minutes.

  2. Add wine and water.

  3. Boil rapidly until reduced to about 3 tablespoons.

  4. Strain and let cool.

Assemble and serve

  1. Prepare curry mayonnaise by combining all ingredients until smooth.

  2. Place peppers in a large bowl (reserving a little for garnish) with chicken, pasta, salt, pepper and curry mayonnaise.

  3. Mix gently until well coated.

  4. If mayonnaise mixture is too thick, add warm water gradually until a smooth consistency is attained.

  5. Place a portion of salad on a bed of spinach and sprinkle reserved peppers on top.

  6. Assemble just before serving, as the mayonnaise quickly loses its fresh look.

What each ingredient does

Chicken
Provides the main protein; poaching keeps the meat tender and moist.
Mayonnaise
Adds fat and creaminess, coating the pasta and chicken to give moisture.
Curry powder
Supplies the warm, aromatic spice flavour that defines the dish.
Bow tie pasta
Gives the salad its body and bulk, soaking up some of the dressing.
Peppers
Add crunch and fresh sweetness that contrast with the soft pasta and chicken.

The step that matters

Thinning the curry mayonnaise with warm water. Adding warm water gradually, rather than all at once, lets the emulsion loosen evenly. Adding it quickly can split or make the dressing grainy, so the salad turns out smooth and well coated.

Swap the onion
