Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starchy bulk that softens and gives the chowder body.
Flour
Thickens the milk broth into a smooth, creamy consistency as it heats.
Milk
Forms the creamy liquid base that the flour thickens.
Butter
Fat that softens the onion and carries flavor into the base.
Processed cheese
Melts into the hot liquid to add richness and a smooth, creamy texture.

The step that matters

Adding the flour mixture to the hot vegetables. Flour clumps if it hits hot liquid unblended. Mixing it with a little cold milk first and stirring constantly while adding it keeps the thickening smooth.

Swap the celery

How well each one fits the dish's main ingredients (onion, butter, potato, pepper, milk, flour, cheese):
