What each ingredient does

All-purpose flour
Thickens the milk-based broth into a creamy, smooth chowder when heated.
Cheddar cheese
Melts into the soup, adding richness and a savory, creamy flavor.
Red potato
Softens during simmering and adds body and starch to the chowder.
Milk
Forms the creamy liquid base of the chowder.
Bacon
Adds smoky, salty fat and flavor, with crisp pieces as a garnish.

The step that matters

Adding the flour and cold water mixture. Flour mixed into cold water and whisked in gradually stays smooth; dumping it in at once forms lumps. The soup must then boil and be stirred to fully thicken the starch.
