What each ingredient does

Lean ground beef
Provides the main protein structure that holds the meatball shape when cooked.
Eggs
Bind the meat mixture together and help it set as it cooks.
Bread
Soaked in milk, it adds moisture and keeps the meatballs tender.
Milk
Softens the bread and adds moisture to the meat mixture.
Picante sauce
Adds moisture and tangy, spiced flavor as the meatballs heat through.

The step that matters

Shape the meatballs firmly and evenly. Mixing thoroughly and shaping firmly helps the eggs and soaked bread bind the meat so the meatballs hold together. Even size ensures they cook through at the same rate, so the centre olive is heated without the outside overcooking.
