Turkey Burgers in Chili Sauce

Ingredients

Directions

Prepare the patties

  1. In a medium bowl combine the ground turkey, 2 tablespoons chili sauce, the egg, half of the chopped onion, garlic salt, and pepper.

  2. Form the mixture into four patties.

Cook the burgers

  1. Heat the vegetable oil in a large skillet.

  2. Add the turkey burgers and cook over medium heat until the bottoms are just browned.

  3. Turn the burgers and sprinkle the remaining chopped onion around them.

  4. Cook, stirring the onions occasionally, until the second side of the patties is just browned and the onions are softened.

Make the sauce and finish

  1. Meanwhile, in a separate bowl mix the remaining chili sauce, brown sugar, mustard, lemon juice, Worcestershire sauce, and 2 tablespoons water.

  2. Bring the sauce to a simmer, reduce the heat to low, cover, and cook until the sauce is thickened and the burgers are cooked through.

What each ingredient does

Ground turkey
Forms the main body of the patties and provides the meaty base of the burger.
Egg
Binds the ground turkey so the patties hold together while cooking.
Chili sauce
Adds sweet-tangy flavor and moisture to the patties and forms the base of the glaze.
White onion
Adds moisture and savory sweetness as it softens in the skillet.
Brown sugar
Adds sweetness and helps the sauce caramelize and thicken slightly.
Vegetable oil
Conducts heat in the skillet and helps the patties brown.

The step that matters

Cook the burgers until the bottoms are just browned before turning. Turkey is lean and the patties can stick or dry out if flipped too early or cooked too hard. Letting a proper crust form first helps them release cleanly and keeps moisture in.

Swap the onion

How well each one fits the dish's main ingredients (turkey, sauce, egg, garlic, pepper, sugar, mustard):
