Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and provide structure so the filling firms when baked.
Light cream
Provides moisture and richness, giving the filling a smooth, tender texture.
Cream cheese
Adds richness and a creamy texture that softens the custard.
Swiss cheese
Melts into the filling, adding savory flavor and stretch to the bite.
Smoked salmon
Supplies the main smoky, savory flavor of the quiche.

The step that matters

Bake the crust before filling. Blind baking the crust with foil and beans sets its shape and dries the base, so the wet custard does not soak it and turn it soggy.

Swap the dill

How well each one fits the dish's main ingredients (salmon, cream cheese, swiss cheese, cheese, egg, cream, pepper):

  1. Dillthe original
  2. Nutmegfits about as well
  3. Garlicfits less well
  4. Capersfits less well

Fit is the average pairing score against salmon, cream cheese, swiss cheese, cheese, egg, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
