Ingredients
- 1 1/2 lbs bones skinless chicken breast cut into bite size chunks
- 1 can chicken broth
- 1 can (8 oz) tomato sauce
- 1 pkg. taco seasoning mix
- 1 c frozen corn
- 1 1/2 c instant rice
- Tortilla Chips
- Shredded Cheddar / Jack cheeses
- (Optionals)
- Diced tomatoes, diced hot peppers, sour cream
Directions
In a large frying pan, cook chicken until no long pink.
Mix together chicken broth, tomato sauce and taco seasoning and pour over chicken.
Bring to boil. Add corn. Return to boil.
Stir in rice, remove from heat, cover and let rest 10 minutes.
Serve over/with tortilla chips, cheese, tomatoes......
