What each ingredient does

Chicken breast
Forms the main protein that is rolled around the filling and baked until cooked through.
Monterey jack cheese
Melts inside the rolled chicken, adding richness and moisture to the filling.
Bread crumbs
Form a crisp, golden coating that browns in the oven around the chicken.
Butter
Carries the crumb coating and helps it brown and crisp in the oven.
Green chilies
Add moisture and mild heat to the filling.

The step that matters

Chilling the rolled chicken before baking. Chilling for at least 4 hours lets the crumb coating set and firm, so it stays on the chicken and the rolls hold their shape in the oven.
