Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey thigh
Provides the main protein; browning in hot oil builds savory flavor and a tender bite.
Lemon juice
Adds acidity that brightens the sauce and balances the spices and fat.
Red onion
Softens and turns sweet as it cooks, adding sweetness and body to the filling.
Sweet red pepper
Softens while cooking, adding sweetness and a fresh vegetable texture.
Garlic
Releases aroma as it cooks in hot oil, adding savory depth.
Flour tortillas
Hold the filling; warming makes them soft and pliable for rolling.

The step that matters

Browning the turkey over high heat. Meat that is crowded or stirred too early releases moisture and steams instead of browning. Browning in a hot, uncrowded skillet creates the Maillard reaction, which produces deeper savory flavor.
