What each ingredient does

Bacon
Adds salty, savory flavor and crisp texture, and its rendered fat carries flavor.
Half and half
Forms the poaching liquid, adding moisture and a creamy, rich body.
Eggs
Set with heat to give the dish its main structure and richness.
Bread
Soaks up the liquid and gives the dish body and a soft, tender texture.
Parmesan cheese
Adds savory, salty flavor and a little browning when sprinkled on top.

The step that matters

Poach the egg whites at a gentle simmer. A hard boil breaks the delicate egg whites into shreds, while a gentle simmer lets them set into neat, cohesive pieces.
