Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavor and body that the soup is built around.
Strawberries
Add sweetness, color and a soft, fruity base to the soup.
Orange juice
Adds liquid for blending and a bright, citrusy acidity.
Sugar
Balances the tartness of the rhubarb and orange juice.

The step that matters

Stir in sugar after cooking. Rhubarb is very tart, and sugar is added off the heat to taste so its sweetness is balanced without being cooked into the fruit. Adding it at the end lets the cook adjust sweetness to the fruit's natural flavor.

Swap the kiwifruit

The recipe marks kiwifruit as optional. How well each one fits the dish's main ingredients (rhubarb, orange, sugar):

  1. Vanillafits better
  2. Lemonfits better
  3. Figfits better
  4. Kiwifruitthe original

Fit is the average pairing score against rhubarb, orange, sugar. Candidates are from the same food group and used in at least 100 recipes.
