Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides savory flavor and a moist, tender filling when cooked.
Crab meat
Adds sweet, briny flavor and a soft texture to the filling.
Manioc
Adds starchy body that helps bind the filling and keep it moist.
Wood ears
Adds a crisp, springy texture to the filling.
Rice paper
Forms the thin wrapper that encloses the filling and crisps when fried.

The step that matters

Wiping the rice paper. Rice paper must be dampened just enough to become pliable; too wet it tears and sticks, too dry it cracks when rolled.

Flavor stand-ins for the lettuce

How well each one fits the dish's main ingredients (rice, pork, crab, onion, pepper, garlic, sugar):

  1. Potatobetter flavor fit
  2. Okrabetter flavor fit
  3. Capsicumbetter flavor fit
  4. Lettucethe original

Fit is the average pairing score against rice, pork, crab, onion, pepper, garlic, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
