What each ingredient does

Chicken breasts
Provides the main protein; searing first helps the surface brown and develop flavour.
Olive oil
Conducts heat for frying and helps the chicken surface brown evenly.
Garlic
Adds aroma and savoury flavour that mellows as it bakes under the wine.
White wine
Adds acidity and moisture, keeping the chicken tender during baking.
Thyme
Contributes herbal aroma that infuses the chicken as it bakes.
Rosemary
Contributes piney aroma that complements the chicken and garlic.

The step that matters

Covering the chicken with wine before baking. The wine adds moisture and acidity that help keep the chicken from drying out during the long bake, so it should cover the pieces before they go into the oven.
