Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Reduced by simmering, it concentrates into a dense, creamy base that sets firm when frozen.
Sugar
Sweetens the kulfi and softens its texture so it is less icy when frozen.
Almonds
Add crunch and a nutty flavour that contrasts with the smooth frozen base.
Pistachios
Add crunch and a mild, nutty flavour and colour to the frozen dessert.

The step that matters

Reducing the milk. Milk can scorch and stick to the pan as it thickens. Stirring steadily over lower heat prevents burnt flavour and keeps the reduced milk smooth, which sets into a creamy kulfi.

Swap the almond

How well each one fits the dish's main ingredients (milk, cardamom, saffron, sugar, pistachio):

  1. Almondthe original
  2. Cashew nutfits about as well
  3. Chickpeafits less well
  4. Hazelnutfits less well
