What each ingredient does

Chicken
Provides the main protein, staying tender when cooked just until no longer pink.
Mushrooms
Release moisture and savory flavor as they brown, giving the sauce body.
Onion
Softens and adds sweetness that balances the wine and broth.
Rigatoni pasta
Tube shape holds the chunky sauce and pieces of chicken and vegetables.
Parmesan cheese
Adds salty, savory depth and a little sharpness to finish the dish.
White wine
Adds acidity and aroma, and its flavour concentrates as the liquid reduces.

The step that matters

Reduce the broth and wine until about half. Simmering uncovered evaporates water and concentrates flavour, so the sauce thickens and tastes richer. Too little reduction leaves it watery; too much can make it salty and sticky once the pasta is added.

Swap the clove

How well each one fits the dish's main ingredients (pasta, olive, pepper, chicken, garlic, mushroom, onion):

  1. Thymefits better
  2. Cuminfits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against pasta, olive, pepper, chicken, garlic, mushroom, onion. Candidates are from the same food group and used in at least 100 recipes.
