Why it works: Rosemary and thyme match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,340 recipes. Both carry 1-octen-3-one, which smells mushroom, metallic. The science ↓
Grilled Tofu and Mushroom Brochettes
Ingredients
Directions
Prepare the marinade
Wash the outside of the lemon thoroughly with warm water and soap.
Pat the lemon dry, then grate the peel and set aside.
Slice the lemon in half and squeeze out the juice into a medium-sized bowl.
Add the garlic, olive oil, white wine vinegar, and chopped herbs to the lemon juice and mix well. Add salt and pepper to taste.
Prepare the skewers
Clean the mushrooms with a damp cloth to remove excess soil. Slice the mushrooms in half and set aside.
Slice the tofu into medium-sized chunks.
Thread tofu alternated with sliced mushrooms onto metal or wood skewers.
Place the skewers into a shallow pan and pour the lemon-herb marinade over them, coating evenly.
Cover with plastic wrap and refrigerate for 1–2 hours.
Grill and serve
Prepare the grill.
Remove the skewers and set aside the reserved marinade for basting.
Cook the skewers over a hot grill, brushing often with the reserved marinade for about 6 minutes or until cooked through.
Serve the skewers with an extra sprinkling of chopped fresh herbs and lemon wedges.

What each ingredient does
- Firm beancurd (tofu)
- Provides a firm, protein-rich base that holds its shape on the skewer and absorbs marinade.
- White button mushrooms
- Add moisture and savory depth, softening and browning slightly on the hot grill.
- Olive oil
- Carries the herbs and aroma and helps keep the skewers moist while grilling.
- White wine vinegar
- Adds acidity that brightens the marinade and gently tenderizes the tofu surface.
- Lemon
- Supplies acidity and citrus aroma from both juice and grated peel.
The step that matters
Cook the skewers over a hot grill, brushing often with marinade. Tofu and mushrooms dry out and stick if the grill is not hot enough or the surface is left unbrushed. Hot grilling browns the surface and sets the outside, while brushing with the reserved marinade adds moisture and flavor as they cook through.
