Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the milk into a smooth, creamy broth as it heats.
Potatoes
Soften during cooking and add body and starch to the chowder.
Milk
Provides the creamy liquid that the flour thickens into the chowder base.
Corn
Adds sweetness and bulk to the chowder.

The step that matters

Adding the milk-flour mixture. Flour clumps if it hits hot liquid directly. Shaking it into cold milk first disperses the starch, and adding it gradually while stirring keeps the chowder smooth as it thickens.
