Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crawfish tails
Provide the main protein, cooked gently in the sauce until heated through.
Tomatoes
Supply acidity and body, reducing to a thick sauce as they simmer.
Margarine or butter
Carries the aromatics and adds richness and flavor as they soften.
Onion
Builds a sweet, savory base as it softens in the fat.
Garlic
Adds aroma that deepens as it cooks gently in the fat.

The step that matters

Simmer until the sauce thickens. The sauce must reduce to the consistency of tomato sauce before the crawfish goes in. Too little simmering leaves it thin and watery, while the tomatoes keep releasing liquid as they cook.

Swap the clove

How well each one fits the dish's main ingredients (butter, tomato, parsley, onion, pepper, celery, garlic):

  1. Thymefits better
  2. Cuminfits better
  3. Tarragonfits better
  4. Clovethe original

Fit is the average pairing score against butter, tomato, parsley, onion, pepper, celery, garlic. Candidates are from the same food group and used in at least 100 recipes.
