What each ingredient does

Almonds
Toast to a light brown, adding crunch and a nutty aroma to the finished dish.
Cornstarch
Thickens the soy and water mixture into a glossy sauce that clings to the vegetables.
Vegetable oil
Conducts heat in the skillet and keeps the vegetables from sticking while they stir-fry.
Soy sauce
Adds salty, savoury flavour to the sauce and helps season the vegetables.

The step that matters

Thickening the sauce with cornstarch. Cornstarch thickens only when it reaches a simmer and is stirred, so the sauce must be kept moving and cooked long enough to lose its raw starchy taste and turn glossy rather than cloudy or lumpy.
