Flourless Sugar-free Chocolate Cake

Ingredients

Directions

Prepare

  1. Preheat oven to 350 degrees.

  2. Coat a 9‑inch springform pan with butter and dust with cocoa powder, leaving excess on the pan.

  3. Combine melted chocolate and remaining butter; stir until smooth and combined.

Make the batter

  1. In a large bowl, combine the chocolate mixture with almond flour, sour cream, egg yolks, and vanilla extract; stir until well blended.

  2. Beat egg whites and salt with an electric mixer until stiff glossy peaks form.

  3. Add one-quarter of the beaten egg whites to the chocolate mixture to lighten.

  4. Gently fold in the remaining egg whites until no white streaks remain.

  5. Pour the batter into the prepared pan and smooth the top.

Bake and cool

  1. Bake for 20 minutes or until the cake has risen and is barely dry on the top; a wooden toothpick inserted should come out with moist crumbs.

  2. Place the cake, still in the pan, on a rack and cool until warm; the cake will fall dramatically.

  3. Loosen the edges of the cake with a knife and remove the pan sides.

Serve

  1. This cake can be combined with sugar‑free chocolate mousse and topped with toasted slivered almonds; the texture should be dense, moist, and slightly fudgy.

  2. Melt chocolate on a low microwave setting just until melted or over a double boiler.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air that lifts the batter; yolks add richness and help set the crumb.
Dark chocolate
Cocoa solids and fat give a rich, fudgy body as the cake sets.
Almond flour
Provides structure without gluten and adds a nutty, tender crumb.
Sour cream
Adds moisture and a slight tang that keeps the crumb tender.
Unsalted butter
Adds fat for moisture, flavor and a glossy, tender crumb.

The step that matters

Folding in the egg whites. Folding gently keeps the air bubbles the whites hold, which lift the batter in the oven. Stirring vigorously deflates the foam, leaving a dense, flat cake.

Swap the almond

How well each one fits the dish's main ingredients (butter, cocoa powder, flour, chocolate, cream, egg, vanilla):

  1. Almondthe original
